One Pan Beef Nachos

One pan, plenty of flavour and very little washing up. These Beef Nachos inspired by @choosingchai combine smoky beef mince, sweet corn, black beans and crunchy corn chips, all baked beneath a layer of melted cheese for the ultimate crowd-pleasing dinner.

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, diced
  • 1 red capsicum, diced
  • 1 green capsicum, diced
  • 1.1 lb beef mince
  • Salt 
  • Pepper
  • 1 tbsp smoked paprika
  • 2 corn cobs, kernels shaved
  • 1 tin black beans, drained and rinsed
  • 1 x 10.6 oz jar salsa
  • 1 tbsp Beef Bone Broth concentrate Native Herbs
  • 1 tbsp chipotles in adobo
  • 7 oz corn chips
  • 3 cups cheddar cheese, grated
  • ½ cup chopped coriander
  1. Preheat oven to 400°F.
  2. In a pan on medium heat, add olive oil, onion, garlic, red and green capsicum. Cook to soften about 5-7 minutes.
  3. Add the beef mince, season with a good pinch of salt and pepper, cook until browned. 
  4. Add the smoked paprika, corn kernels, black beans, salsa, chipotle in adobo and Beef Bone Broth concentrate Native Herbs. Mix through and cook for about 5 minutes.
  5. Place the corn chips onto the mince then cover with the cheese. Bake for 8-10 mins until golden brown.
