Rice Cooker Inspired Oyako-don

The recipe comes rice on time - in 40 minutes to be exact! Tender chicken, fluffy rice and silky eggs soak up the rich savoury flavour of Chicken Bone Broth as everything cooks together, adding protein and collagen to every bite. It's an easy one-pot meal you'll want to make again and again and again.

  • 1.1 lb chicken thighs, cut into chunks
  • 1 brown onion, sliced
  • 4 free range eggs
  • 3 tbsp soy sauce
  • 2 tbsp Chicken Bone Broth Homestyle Original 
  • ½ cup mirin
  • 2 tsp sesame oil
  • 2 tsp organic dashi stock powder/liquid (optional but delicious)
  • 2 cups short grain (sushi) rice
  • 3 cups water
  • 2 sheets of nori, sliced finely, to serve
  • Pickled ginger, to serve
  • Shallots, sliced to serve
  1. Wash your rice until the water runs clear
  2. Add your washed rice and water to your rice cooker
  3. Add soy sauce, Chicken Bone Broth Homestyle Original , mirin, dashi stock powder and sesame oil to the water.
  4. Add sliced onions and chicken to the top of the rice (do not mix)
  5. Close rice cooker and press ‘white rice’ setting
  6. When the rice cooker is almost finished, scramble your eggs in a bowl
  7. When the rice cooker is complete, open the lid and pour over the scrambled eggs and close the rice cooker again for 5-10 mins (to cook the eggs)
  8. Serve into 4 bowls and top with sliced nori, shallots and pickled ginger.
