Add sliced onions and chicken to the top of the rice (do not mix)
Close rice cooker and press ‘white rice’ setting
When the rice cooker is almost finished, scramble your eggs in a bowl
When the rice cooker is complete, open the lid and pour over the scrambled eggs and close the rice cooker again for 5-10 mins (to cook the eggs)
Serve into 4 bowls and top with sliced nori, shallots and pickled ginger.
