Roast Beef Tenderloin with (viral) Cowboy Butter

  • 2.2 - 2.75 lbs beef tenderloin (trussed - ask the butcher to do this for you, helps the roast to keep it’s shape) - see Note 1 
  • Good pinch of sea salt
  • Good pinch of pepper
  • 1.76 oz salted butter
  • A few sprigs of thyme

Cowboy Butter

  • 4.2 oz unsalted butter, softened 
  • 2 tbsp Beef Bone Broth Concentrate Native Herbs
  • 2 tbsp parsley, finely chopped
  • 1 tbsp chives, finely chopped
  • ½ tsp thyme leaves, finely chopped
  • 3 cloves garlic, finely grated or minced
  • 1 tbsp lemon juice
  • 1 tbsp dijon mustard
  • 1 tbsp smoked paprika
  • ½ tsp worcestershire sauce
  • ½ tsp chilli flakes
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper, or to taste
  1. Pat dry the tenderloin and season with salt and pepper. Leave in the refrigerator overnight, uncovered, to dry brine. 
  2. Remove tenderloin from the fridge 2 hours prior to cooking.
  3. Preheat the oven to 250F.
  4. In a large pan over a high heat sear tenderloin quickly on each side, this should take about 5 mins.
  5. Add 1.76 oz salted butter to the pan and baste the meat for the final few minutes.
  6. Transfer tenderloin to a baking tray and place in the oven, roast for 1 hour (internal temp of 150F) - see Note 2
  7. Once finished roasting, remove from the oven and allow to rest for 20 mins. 
  8. While the tenderloin is resting, make the cowboy butter in the same pan, by combining all ingredients over a medium heat and stirring until combined. 
  9. Thickly slice your tenderloin and serve dipped into the cowboy butter. Oh man! 

Notes

  1. You can also use an eye fillet as a cost-saving alternative. 
  2. Adjust your cook time for the weight of your meat if using eye fillet.
