  • 1 brown onion, quartered
  • 4 garlic cloves
  • 1 red chilli (optional)
  • Bunch of fresh parsley
  • 1 kg beef mince, 5% fat works best for this
  • 4 tbsp Beef Bone Broth Concentrate Natural Beef
  • 1 garlic clove, grated (super fine)
  • 2 tbsp ground cumin
  • 2 tbsp smoked paprika
  • 1 tbsp dried oregano
  • 2 tbsp olive oil
  • Freshly ground black pepper
  • 300g Greek yoghurt
  • 1 small cucumber, grated
  • 1 tbsp fresh or dried dill
  • 2 tbsp fresh lemon juice
  • ½ tsp sea salt
  • 1 red onion, finely sliced
  • 1 red tomato, sliced
  • 8 flat breads
  1. Preheat the oven to 390F. Blend 1 brown onion, 4 garlic cloves, red chilli and ¼ bunch of fresh parsley in a blender until it is a rough paste.
  2. Add paste to beef mince, Beef Bone Broth Concentrate Natural Beef and spices and mix well until combined.
  3. Grease a large oven tray and spread the beef mixture evenly across the tray about 1 cm thick. Brush with olive oil on top.
  4. Make slices in the beef mixture about 3-4cm thick in order to be able to take a piece out easily once baked.
  5. Bake in the oven for 20 mins then grill for 2-4 mins on high to finish and crisp up.
  6. Drain off fat from the pan.
  7. Make your tzatziki by combining yoghurt, cucumber, lemon juice, 1 fine grated garlic clove, salt and dill. Mix and set aside.
  8. Warm the flatbreads and assemble your kebabs by laying down a smear of tzatziki followed by 1-2 strips of meat, red onion, tomato, leftover cucumber, fresh parsley, cracked pepper & drizzle of olive oil.
