Preheat oven to 350°F. Cut your pumpkin into small bite size pieces, cauliflower into florets, and red onion into slices.
Grate garlic, into a small bowl, add olive oil, salt, ground cinnamon and smoked paprika. Mix to combine.
Place veggies onto a lined baking tray. Cover with oil garlic mixture, toss to combine and bake for 25-30 min until tender.
Meanwhile, add your rice, tofu, water and veggie concentrate to a pot or rice cooker, cook rice to packet instructions.
