Veggie Grain Bowl

This bowl is grain-ing popularity for good reason. Warm roasted veggies meet fluffy rice and tender tofu, brought together with Vegetable Concentrate for added depth and support for everyday nourishment. It’s a simple, satisfying meal that works as a delicious family dinner or even a week of meal prep!

  • 3 tbsp olive oil
  • Salt (to taste)
  • 3 cloves garlic
  • ½ tsp ground cinnamon
  • 1 tsp smoked paprika
  • 4 cups pumpkin, cubed (about 1–1.2 lb)
  • 1 medium cauliflower, cut into florets
  • 1 red onion, sliced
  • 1 ½ cups brown rice
  • 18–21 oz tofu, medium firmness
  • 2 tbsp Vegetable Concentrate
  • 3 cups water
  • ¼ cup pepitas
  • ½ cup parsley leaves
  • ½ lemon
  • ½–1 cup feta, crumbled (to taste)
  1. Preheat oven to 350°F. Cut your pumpkin into small bite size pieces, cauliflower into florets, and red onion into slices.
  2. Grate garlic, into a small bowl, add olive oil, salt, ground cinnamon and smoked paprika. Mix to combine.
  3. Place veggies onto a lined baking tray. Cover with oil garlic mixture, toss to combine and bake for 25-30 min until tender.
  4. Meanwhile, add your rice, tofu, water and veggie concentrate to a pot or rice cooker, cook rice to packet instructions. 
  5. To assemble, add roast veggies, rice and tofu to bowls, scatter over feta, pepitas and parsley, squeeze over lemon juice.
