Beef Brisket with Bourbon Glaze

Bourbon puts a little spirit (literally) into this combination of magical herbs and spices that bring out the juicy flavours of beef brisket. For the brisket:

  • Approximately 6.6 pounds beef brisket (high welfare if possible) - use the point cut (not the flat)
  • 3 tbsp Beef Bone Broth Concentrate Natural
  • 3 tablespoons sea salt
  • 2 tablespoons cracked black pepper
  • 2 tablespoons smoked paprika
  • 2 tablespoons olive oil

For the glaze:

  • 3 tablespoons apple cider vinegar
  • 1/3 cup bourbon
  • 1/3 cup maple syrup
  1. Trim any excessive fat off the brisket (or ask your butcher to do it).
  2. Pat the brisket dry and coat lightly with olive oil.
  3. Mix together salt, pepper, and paprika, and spread all over the brisket.
  4. Place the brisket in a large baking pan and cover with foil.
  5. Leave on the counter for an hour to come to room temperature.
  6. Preheat oven to 300°F.
  7. Bake the brisket in foil cover for approximately 5 hours (internal temperature should be around 212°F).
  8. Mix together glaze ingredients in a bowl during the last hour of baking.
  9. Remove foil from the top of the brisket and glaze with 1/3 of the mixture.
  10. Turn the oven up to 350°F and bake for 10 minutes, reglaze, and repeat until the glaze is all on.
  11. Remove from the oven and let it rest for 45 minutes.
  12. Serve and slice against the grain (google it if you need more guidance).
