Veggie Hero Snack Train

Nothing quite makes veggie sticks more appetising and fun for kids than a dip, and this veggie stick and dip combination ticks all the delicious and nutritious boxes. Featuring Veggie Hero with 14 veggies, fruits and super greens to boost fruit and veggie intake, support immunity, energy and growth & development. Make these for some lunchbox fuel or create the ‘snack train’  version for a fun weekend activity or healthy treat for a kids party.   • 8.8 oz (1 cup) cream cheese
  • 3 tbsp Veggie Hero
  • ½ tsp salt
  • ½ tsp garlic powder
  • 1 tsp lemon juice
  • 3 carrots, halved and cut into sticks
  • 3 cucumbers, halved and cut into sticks
  • 2 pieces of celery, cut into sticks
  • 1 yellow bell pepper (capsicum)

If making a snack train:

  • 1 red bell pepper (capsicum)
  • 1 yellow bell pepper (capsicum)
  • 1 green bell pepper (capsicum)
  • 1 cucumber, cut into rounds
  • In a bowl, mix together the cream cheese, Veggie Hero, salt, garlic powder, and lemon juice until well combined.
  • For a lunch box snack, place some of the dip in a small container or dip compartment, and add a selection of veggie sticks (carrots, cucumbers, and celery) to the lunch box.
  • To make the snack train, cut the top third off the red, yellow, and green bell peppers and remove the core and seeds. Arrange them in a line on a platter or chopping board.
  • Use toothpicks or some of the cream cheese mixture to secure cucumber rounds as wheels to the base of the bell peppers.
  • Place the dip in the first compartment, then the vegetable sticks in the second and third compartments.
  • Enjoy the cuteness of your snack train!
