Gelatin, also known as gelatine, is derived from animal body parts like bones, cartilage and skin. Gelatin is usually derived from bovine or marine animals and is broken down and hydrolysed to be the perfect size to gel and set in different food applications. Gelatin is flavourless and colourless and turns into a jelly-like substance when bloomed.

What is the difference between a gelatin sheet and powder?

The difference between a gelatin sheet and gelatin powder is quite simple, gelatin powder is a powdered consistency, whereas a gelatin sheet is a translucent, thin sheet of gelatin. One tablespoon of powdered gelatin is roughly equivalent to four gelatin sheets.

Tips for using Gelatin

When it comes to the ‘how to’ of using gelatin powder, here are a few hot tips that will keep it nice and simple for you.

  • One tablespoon of gelatin will set two cups of liquid.
  • Always use a dry spoon when measuring your gelatin so no liquid can change the structure of the rest of the gelatin powder in the tin.
  • Leave your gelatin to bloom for an extra minute or so. Adding it too soon may mean the gelatin hasn’t properly bloomed.
  • Make sure the liquid you are adding your bloomed gelatin into is warm enough, if it is too cold or lukewarm it may affect the gelatin and make it stringy instead of dissolving properly into adequately heated liquid.
  • Make sure your moulds or tin is ready and waiting so that you can add your gelatin in right away while it’s warm.
  • Don’t overheat your gelatin and always follow the recipe instructions.
  • Don’t add your gelatin into the freezer, just use the fridge so that the jelly-like texture can be set properly and at the right temperature.

What is the Difference Between Gelatin and Collagen?

The main difference between gelatin and collagen is the size they are broken down to, and the way that each of them dissolves. Gelatin forms a gelatinous substance when bloomed and then melted, whereas collagen dissolves completely in hot or cold liquids.
